A commercial hood cleaning is only as good as the part you can’t see from the kitchen floor. Grease sprayed off the canopy but left in the duct run or the fan bowl is still fuel. It depends on how many hoods you have, how much ductwork runs between them and the roof, and what shape the system is in when we open it. The number we quote is the number you pay. If we find something that changes the job, you hear it before we start, not on the invoice. Systems that have been neglected for years are quoted separately from ongoing service, and you’ll get both numbers up front.

NFPA 96 sets the interval by what you actually cook, not by the size of your kitchen. Solid fuel is monthly. High-volume operations are quarterly. Moderate volume is semiannual, and low-volume operations like churches or seasonal kitchens are annual. Most operators we meet are on the wrong interval in one direction or the other.

A digital service report and a downloadable PDF, photographs of the work, completed checklists, a dated certification decal on the hood, and your invoice. It’s the record your fire inspector and your insurer will ask for, and it’s in your hands the same night.
